Chili Con Carne

This recipe comes from Esther Shenk, author of Mennonite Country Style Recipes. It is a large recipe, but may be frozen for later use. Esther says her mother always made a large pot of this soup to treat the Christmas carolers at their little country church after an evening of caroling in the cold Indiana weather. |
Soak overnight and cook 1 ½ to 2 hours until tender in 6-quart pot
1 lb dried kidney beans*
5 cups water
*Or use 3 (16-oz.) cans kidney beans
Sauté in skillet until hamburger is slightly browned.
1 ½ lbs. hamburger
1 large onion, chopped
1 or 2 stems celery, chopped (optional)
1 large garlic clove, minced, or ¼ teaspoon garlic powder
2 tablespoons green pepper, chopped (optional)
Add to hamburger mixture, stirring well. Then add beans and simmer several minutes longer.
1 to ½ quarts tomato juice
1 pint canned tomatoes, chopped
3 teaspoon salt
3 tablespoons brown sugar
1 tablespoon chili powder
½ teaspoon celery seed
1/8 teaspoon dried crushed red peppers (optional)
1/8 teaspoon sage (optional)
Yield: approximately 5 quarts
