Chicken and Beans in Red Curry
Carmen Wyse was introduced to this dish at her local Thai Restaurant and thought a lot about trying to recreate it. She reports, "I found two recipes online that seemed a good starting place, combined them and added a bit of my own, and came up with this. It turned out delicious and very close to the restaurant dish. Red curry paste is quite spicy, so judge how much to use based on your family’s preferences."
