Chewy Granola Bars

Jodi writes, "I like these granola bars more than some I’ve tried, because they remain chewy, and are easy to cut into bars and freeze. If you like your granola bars crunchy, you can simply bake them for a few minutes. Toss frozen granola bars in lunchboxes or picnic bags for a nutritious snack."

2 cups old-fashioned oatmeal
1 cup sliced or slivered almonds
1 cup shredded coconut
½ cup toasted wheat germ
¼ cup flax meal (optional)
3 tablespoons butter
½ cup honey
½ cup peanut butter
¼ cup brown sugar
2 teaspoons vanilla extract
¼ teaspoon salt
½ -1½ cups dried fruit (cranberries, raisins, chopped apricots, chopped pitted dates, etc)
 
Preheat the oven to 350°. Grease an 8x12 inch baking dish and line it with parchment paper.
 
Toss the oatmeal, almonds, and coconut together on a sheet pan and bake for 10-12 minutes, stirring occasionally until lightly browned. Transfer the mixture to a large mixing bowl and stir in the wheat germ and flax meal.
 
Place the butter, honey, peanut butter, brown sugar, vanilla and salt in a small saucepan and bring to a boil over medium heat. Cook and stir for a minute, then pour over the toasted oatmeal mixture. Add the dried fruit and stir well.
 
Pour the mixture into the greased pan. Wet your fingers and press the mixture evenly into the pan. (For crunchy bars, bake in a 300° oven for about 15 minutes, until light golden brown.) Cool completely (2-3 hours, if you baked them), then use the parchment paper to lift the mixture out of the pan. Cut into squares.
